These Peanut Butter Walnut Bars are my new favourite breakfast and midday snack. Funnily enough, I never intended to put this on the BREAKFIRST menu. It started out as something fun I thought I’d bake on a quiet night, but you guys saw this on Instagram and went nuts! So I’ve since taken some time to perfect it… and finally, here it is!
Perfectly fudgy in the centre with loads of walnuts (aka brain food) and high-quality 70% dark chocolate.
I’ve also intentionally reduced the sugar content in these bars, so you won’t be getting a sugar rush first thing in the morning. You will however enjoy hints of sweetness from the chocolate chunks 🙂 And if that isn’t enough, peanut butter is made from scratch with no added salt or sugar.
These bars are also vegan-friendly – no eggs or dairy. Perfect for my vegan friends!
VEGAN-FRIENDLY PEANUT BUTTER WALNUT BARS
Ingredients: Homemade peanut butter, organic wholewheat flour, organic black bean soy milk, organic raw cane sugar, walnuts, 70% dark chocolate, coffee, cinnamon, organic himalayan salt
Loaf pan dimensions: 7×7 square pan
How to store:
The Peanut Butter Walnut Bars can be stored in a sealed container at room temperature for 3 days. Thereafter, keep refrigerated for up to 1 week. If you like them warm, simply reheat for 15-30 seconds in a microwave with a mug of water or 5 mins in a toaster oven and they are ready to be enjoyed.
